Spice Up Your Summer with Homemade Buffalo Chicken Poppers and Chicken Bombs

Our fresh ingredients and chef-inspired flavors are what keeps our customers coming back for more, whether they’re dining in, grabbing curbside pickup, or ordering delivery.

But what if we told you there was another way to enjoy our tasty, tender chicken at home? Much like our Ranchero Tots Menu Hack, we’re back with two new, easy recipes that incorporate our boneless chicken: Buffalo Chicken Poppers and Buffalo Chicken Bombs.

Our recipe for Buffalo Chicken Poppers starts with a combination of our breaded (or grilled) boneless wings and buffalo sauce, two kinds of cheese, and green onions that are then rolled into small balls and coated in a bread crumb mixture. The poppers are then fried in oil and served hot.

Buffalo Chicken Bombs start out with a similar mixture of chicken, cheese, and buffalo sauce, but the filling is then folded into a small section of pre-made pizza dough, brushed with oil, and baked.

Poppers and Chicken Bombs can be dipped in more buffalo sauce, our famous bleu cheese dressing, ranch, or all three! And, both recipes (as well as all of our Wings and Rings offerings) are the perfect accompaniment to your summer get-togethers, sports-related or not.

All you need to pull off making Buffalo Chicken Poppers and Buffalo Chicken Bombs at home is an order or two of boneless wings, a little creativity, a few extra ingredients, and your appetite.

How to Make Buffalo Chicken Poppers and Buffalo Chicken Bombs

Buffalo Chicken Poppers

Order:

  • 10 boneless wings (breaded or grilled), cut into small dice (buffalo sauce on the side)
  • Additional Buffalo sauce (optional)
  • Bleu cheese or ranch for dipping (optional)

Other:

  • 1 tsp of ground black pepper
  • ¾ cup of shredded sharp cheddar cheese
  • ¾ cup of shredded mozzarella cheese
  • ¼ cup thinly cut green onions
  • 1 cup all-purpose flour
  • 1 ¾ cup of panko bread crumbst
  • 3 lightly beaten eggs
  • Vegetable oil for frying

Directions:

  1. Start to heat the oil in a large, deep skillet or fryer according to appliance directions.
  2. Mix together the chicken, black pepper, both cheeses, and green onions in a bowl.
  3. Roll the chicken mixture into golf ball-sized balls with your hands and set on a tray.
  4. Place the flour, whisked eggs, and panko into three separate bowls.
  5. Roll each ball into first the flour, then the egg, and then the bread crumbs, and put back on the tray.
  6. Fry the Buffalo Chicken Poppers in batches for about 2-3 minutes per batch.
  7. Lay the fried Poppers on a paper towel to drain and cool a bit.
  8. Serve with buffalo sauce, bleu cheese, or ranch for dipping.

Buffalo Chicken Bombs

Order :

  • 10 boneless wings (breaded or grilled), cut into small dice (buffalo sauce on the side)
  • 2 additional orders of Buffalo sauce (optional)
  • Bleu cheese or ranch for dipping (optional)

Other :

  • ½ cup shredded mozzarella cheese
  • ¼ cup thinly cut green onions
  • 1 package refrigerated pizza dough (thawed according to package directions)
  • Olive oil

Directions :

  • Preheat the oven to 425°F
  • Mix together the chicken, ¾ cup of buffalo sauce, cheese, and green onions in a bowl.
  • Roll out pizza dough and cut into 18 pieces.
  • Flatten a piece of dough in your hand and put 1 teaspoon of chicken mixture in the middle of the dough. Pinch the dough together around the chicken to form a ball with the dough. Add the dough balls to a nonstick baking sheet (or a baking sheet lined with parchment paper).
  • Repeat with remaining mixture and dough.
  • Brush the tops of the dough with olive oil and put them in the oven to bake for about 20-25 minutes or till golden brown.
  • Dip Buffalo Chicken Bombs into buffalo sauce, bleu cheese, or ranch dressing.
